Step 1
In a spacious Dutch oven, combine your chopped pears with freshly squeezed orange juice, then add the vibrant orange zest, aromatic ground cinnamon, nutmeg, cardamom, and the fragrant seeds from a split vanilla bean.

Bring this delightful mixture to a boil, then cover and reduce the heat, allowing it to simmer gently for 45 minutes to an hour until the pears become tender and luscious.

Once tender, transform the mixture into a smooth puree using a food processor or food mill, then return the silky pear puree to the Dutch oven.

Stir in white sugar until it dissolves completely, then cook the mixture over medium heat, uncovered, stirring frequently until it thickens, which should take about 30 to 40 minutes.
