Cooking Instructions
Follow our step-by-step guide on how to make Spiced Red Lentils with Basmati Rice.
Step 1
Start by rinsing your basmati rice under cold water until the water runs clear, ensuring you wash away any excess starch.
Step 2
Once rinsed, soak the rice in a bowl of water for 15 minutes to an hour, then drain it well.
Step 3
In a large pot, combine 3 cups of water with the rinsed red lentils and bring it to a gentle simmer over medium heat.
Step 4
As it heats up, keep an eye on the surface and skim off any foam that forms.
Step 5
If you’re using onion, chop it up and add it to the pot along with ground cumin, ground coriander, salt, black pepper, cayenne, and ground turmeric.
Step 6
Lower the heat and let everything simmer, partially covered, for about 30 minutes, or until the lentils are tender and flavorful.
Step 7
Next, stir in the broccoli, diced tomatoes, and frozen peas if you like.
Step 8
Continue cooking for another 30 minutes, stirring occasionally, until the lentils are soft and the vegetables are perfectly cooked.
Step 9
Meanwhile, in a separate pot, combine the drained basmati rice with 1 ½ cups of water.
Step 10
Bring it to a boil, then reduce the heat to the lowest setting.
Step 11
Cover it tightly and let it simmer for about 20 minutes, or until the rice is fluffy and all the water has been absorbed.
Step 12
In a small skillet, heat some olive oil over medium heat and add sliced mushrooms, grated ginger, and grated garlic.
Step 13
Sauté for 3 to 5 minutes until the mushrooms are tender and fragrant.
Step 14
Pour this delicious mixture over the lentils and give it a good stir to combine everything.
Step 15
Let it cook for an additional 5 minutes to allow the flavors to meld beautifully.
Step 16
Finally, serve your spiced lentils over the fluffy basmati rice, and enjoy a comforting, wholesome meal that’s sure to warm your heart!.
