Start by creating a fragrant masala podi. In a skillet, heat 1 tablespoon of cooking oil over medium heat. Add the split Bengal gram, skinned split black lentils, dried red chile peppers, coriander seeds, and cumin seeds. Sauté these ingredients until they become aromatic and start to brown, which should take about 5 minutes. Once done, transfer this mixture to a mortar and pestle, and grind it together with the flaked coconut until you achieve a fine powder. This will be your masala podi, packed with flavor!
Step 2
Next, in a large skillet, heat 2 tablespoons of cooking oil. Toss in the peanuts and mustard seeds, frying them until the peanuts turn a lovely golden brown, which should take around 2 to 3 minutes. Now, add the minced onions, halved green chile peppers, fresh curry leaves, and a sprinkle of asafoetida powder. Stir everything together and cook until the onions are beautifully browned, about 5 to 7 minutes.

Once the onions are ready, stir in the minced tomatoes, ground turmeric, white sugar, and salt. Let this mixture simmer until the tomatoes soften and meld with the spices, which should take about 10 minutes. The aroma will be irresistible!

Now, it’s time to bring everything together. Sprinkle the prepared masala podi over the tomato mixture. Gently crumble the cold, cooked white rice into the skillet, using the back of a spoon to separate the grains. Stir everything together, ensuring the rice is well-coated and heated through, which should take another 5 to 7 minutes.
