Cooking Instructions
Follow our step-by-step guide on how to make Spicy Roasted Tomato Ricotta Pasta Sauce.
Step 1
Begin by preheating your oven to a cozy 300°F (150°C) and prepare a rimmed baking sheet with a layer of parchment paper.
Step 2
In a medium bowl, toss together halved Roma tomatoes, four tablespoons of olive oil, minced garlic, a quarter teaspoon of salt, and a sprinkle of ground black pepper until the tomatoes are beautifully coated.
Step 3
Lay the tomatoes cut-side up in a single layer on the prepared baking sheet, allowing them to bask in the oven for about two hours, or until they become soft and juicy.
Step 4
Once they’re perfectly roasted, take them out and crank the oven up to 400°F (200°C).
Step 5
Sprinkle the tomatoes with the remaining teaspoon of salt, a touch of white sugar, Italian seasoning, dried rosemary, dried basil, dried parsley, garlic powder, onion powder, and if you like a kick, some red pepper flakes.
Step 6
Drizzle the last tablespoon of olive oil over the top, then return the baking sheet to the oven for an additional 20 minutes of roasting.
Step 7
While the tomatoes are working their magic, heat a frying pan over medium heat and add ground hot Italian sausage along with sliced sweet onion.
Step 8
Cook until the sausage is no longer pink and the onion is tender, which should take about seven minutes.
Step 9
Once done, remove from heat and set aside.
Step 10
Next, transfer the roasted tomatoes and their juices into a food processor and blend until you achieve your desired consistency.
Step 11
Add in ricotta and grated Parmesan cheese, pulsing gently to combine.
Step 12
Pour this luscious tomato sauce into a bowl and fold in the cooked sausage and onion mixture.
Step 13
Serve this delightful creation over your favorite pasta for a comforting meal that warms the soul.
Step 14
Enjoy every bite!.
