Step 1
In a medium saucepan, heat the coconut oil over high heat.

Add the sliced jalapeno and habanero peppers, minced onion, minced garlic, lime juice, and salt to the pan. Sautรฉ the mixture for about 5 minutes until the vegetables are softened.

Reduce the heat to a simmer and stir in the watermelon juice and diced mango. Cook for an additional 20 minutes, stirring often.

Remove the saucepan from heat and allow the mixture to cool to room temperature, which should take about 15 to 30 minutes.

Once cooled, transfer the mixture to a food processor and blend until smooth. With the processor running, gradually add the white vinegar until fully combined.
