Cooking Instructions
Follow our step-by-step guide on how to make Sprouted Wheat Berry Bread.
Step 1
A few days before you’re ready to savor your homemade bread, start by rinsing the wheat berries under cool water.
Step 2
Once they’re clean, drain them and place them in a large bowl, covering them with fresh cool water.
Step 3
Let those little gems soak at room temperature overnight, or for about 12 hours, so they can soak up all that moisture.
Step 4
After soaking, drain the wheat berries in a colander.
Step 5
To keep them nice and moist, cover the colander with a plate and tuck it away in a dark spot, away from sunlight.
Step 6
Rinse the berries about three times a day until you see tiny sprouts beginning to emerge, which should take a couple of days.
Step 7
You’ll know they’re ready when the sprouts reach about a quarter of an inch in length.
Step 8
Once your wheat berries have sprouted, it’s time to transform them into dough.
Step 9
Grind the sprouted berries using a food mill or food processor until you achieve a mushy consistency.
Step 10
Now, transfer this mixture to a clean work surface and knead the dough for about 10 minutes.
Step 11
Feel free to get your hands in there; it’s a great way to relieve stress! Shape the kneaded dough into two small round loaves by hand.
Step 12
To prepare for baking, sprinkle a baking sheet with a little cornmeal or bran to prevent sticking, and place your loaves on it.
Step 13
There’s no need to preheat the oven just yet.
Step 14
Cover the loaves with cloches and bake them at 350°F (175°C) for 30 minutes.
Step 15
After that, lower the temperature to 325°F (165°C) and let them bake for an additional 2 hours and 15 minutes.
Step 16
Once your kitchen is filled with the delightful aroma of freshly baked bread, take the loaves out and allow them to cool completely on a cooling rack for several hours.
Step 17
Because this bread has a high moisture content, it’s best to store it in the refrigerator.
Step 18
When you’re ready to enjoy it, slice the bread thinly or break it apart by hand for a rustic touch.
Step 19
Enjoy the fruits of your labor and the wonderful flavors of your homemade bread!.
