Cooking Instructions
Follow our step-by-step guide on how to make Steak Diane with Demi-Glace Sauce.
Step 1
Start by generously seasoning your steaks on both sides with salt, then let them rest at room temperature while you whip up a delicious sauce.
Step 2
In a mixing bowl, combine demi-glace, Dijon mustard, Worcestershire sauce, tomato paste, and a pinch of cayenne pepper.
Step 3
Stir until everything is well blended and set aside.
Step 4
Next, heat a splash of oil in a skillet over high heat, making sure the surface is evenly coated.
Step 5
When the oil starts to smoke, it’s time to add the steaks along with a few chunks of butter.
Step 6
Sear the steaks for about 2 to 3 minutes on each side, aiming for that perfect rare finish with an internal temperature of 125°F (52°C).
Step 7
Once done, transfer the steaks to a warm plate to rest.
Step 8
Now, add shallots to the skillet and sauté for 2 to 3 minutes until they soften and become fragrant.
Step 9
Carefully remove the skillet from the heat and pour in some Cognac, igniting it with a lighter to burn off the alcohol—this adds a wonderful depth of flavor! Once the flames die down, return the skillet to high heat and bring the mixture to a boil, stirring occasionally to reduce it slightly.
Step 10
Next, stir in your demi-glace mixture, a splash of cream, and any delicious juices from the resting steaks.
Step 11
Let this simmer on high heat for about 3 to 5 minutes until the sauce thickens beautifully.
Step 12
Finally, return the steaks to the pan, reduce the heat to low, and let them warm through to your desired doneness.
Step 13
When you’re ready to serve, plate the steaks on warm dishes and generously drizzle the rich sauce over them.
Step 14
For a pop of color and flavor, garnish with freshly chopped chives.
Step 15
Enjoy your culinary masterpiece!.
