Step 1
In a bowl, combine the quartered strawberries with the white sugar. Set aside to allow the strawberries to release their juices.
Step 2
In another bowl, mix together the mascarpone cheese, 1/4 cup of the confectioners' sugar, ricotta cheese, and a dash of vanilla extract until smooth. Set this mixture aside for the filling.
Step 3
In a separate bowl, whip the remaining 1/4 cup of confectioners' sugar with the heavy cream using an electric mixer until soft peaks form. Transfer the whipped cream to a pastry bag and refrigerate until ready to use.
Step 4
Arrange the tart shells on a serving platter. Fill each shell with the mascarpone and ricotta mixture, smoothing it out evenly.
Step 5
Top each filled tart with the macerated strawberries, allowing some of the juices to drizzle over the top.
