Cooking Instructions
Follow our step-by-step guide on how to make Strawberry Shortcake Delight.
Step 1
Start by placing the sliced strawberries in a mixing bowl and sprinkling them with 1 cup of granulated sugar. Give them a gentle stir, cover the bowl, and let the strawberries chill in the refrigerator for at least 2 hours, or even overnight. This allows the strawberries to release their juices and create a delicious syrup. Remember to stir them occasionally for the best results!
Step 2
Preheat your oven to 375ยฐF (190ยฐC). While the oven warms up, grease and flour a 9x13-inch baking dish to ensure your cake comes out easily after baking. In a separate mixing bowl, whisk together the all-purpose flour, cornstarch, and baking powder until well combined.
Step 3
In a small bowl, beat the egg yolks with the vanilla extract until smooth and creamy. Set this mixture aside for later. Now, take another bowl and whip the egg whites with an electric mixer until they form stiff peaks. Gradually add in the 1 1/4 cups of granulated sugar, a few tablespoons at a time, until the sugar is fully incorporated and the egg whites are glossy and stiff.
Step 4
Gently fold the egg yolk mixture into the whipped egg whites until just blended. Next, fold in the flour mixture, being careful not to overmix. It's okay if a few small lumps of flour remain; this will keep your cake light and airy. Once combined, pour the batter into the prepared baking dish, spreading it evenly.
Step 5
Bake in the preheated oven for 22 to 25 minutes, or until a toothpick inserted into the center comes out clean. Once baked, let the cake cool in the pan for about 5 minutes before inverting it onto a sheet of waxed paper. Cut the cake into 8 equal squares as it cools.
Step 6
While the cake is cooling, whip the heavy cream with the confectioners' sugar until soft peaks form. This will create a light and sweet topping for your shortcake.
Step 7
To assemble your strawberry shortcakes, take each cake square and slice it in half horizontally. Place the bottom half on a dessert plate, spoon on a generous amount of the syrupy strawberries, and then place the top half of the cake back on. Finish with a dollop of whipped cream on top, and enjoy this delightful treat!
