Step 1
Preheat your oven to 350°F (175°C) and line 18 cupcake cups with paper liners.
Step 2
In a mixing bowl, beat together the butter, 1/2 cup of sugar, egg, and vanilla extract using an electric mixer until the mixture is smooth and creamy.

In a separate bowl, sift together 1 1/2 cups of flour, baking powder, baking soda, and salt. Gradually mix this dry mixture into the butter mixture until well combined.

Spoon 1 teaspoon of the cookie batter into each of the prepared cupcake cups. Sprinkle a little extra sugar on top of each cup.

Bake in the preheated oven for about 10 minutes, or until the cookie cups are golden brown. Remove from the oven and use a teaspoon to indent each cup gently. Allow them to cool for 10 minutes.

While the cookie cups are cooling, prepare the cream cheese filling. In a mixing bowl, beat together the cream cheese, 1/4 cup plus 2 tablespoons of sugar, and an egg until smooth and well combined.
