Step 1
Start by gathering your ingredients and a large pot. Place the chopped red plums, fresh pineapple, frozen orange juice concentrate, apple juice, and freshly squeezed lemon juice into the pot. Heat this mixture over medium-low heat, covering it to help the fruits soften. Allow it to cook for about 15 to 20 minutes, stirring occasionally. You'll know it's ready when the plums are soft and fragrant.
Step 2
Once the fruits are soft, take a potato masher and gently mash the mixture. You want to break it down thoroughly while leaving some small chunks for texture. This will give your jam a delightful consistency.

Next, bring the mixture to a slow simmer. Stir in the powdered fruit pectin, a tablespoon of unsalted butter (this helps reduce foaming), ground cloves, and ground allspice. Increase the heat to high and bring the mixture to a full, rolling boil. Keep stirring constantly for about one minute to ensure everything is well combined.

Now, it's time to add the sugar! Stir in the 8 cups of white sugar, continuing to stir constantly. Allow the mixture to return to a full, rolling boil for another minute. This is where the magic happens, and your jam starts to thicken beautifully.
