Step 1
Start by bringing 2 1/2 gallons of water and 1 tablespoon of salt to a rolling boil in a large enamel stockpot. Once boiling, add the watermelon rinds and let them cook for 20 minutes. Afterward, drain the rinds in a colander and set them aside.
Step 2
In a separate pot, bring 1 quart of cider vinegar to a boil along with 6 cups of sugar. Once it reaches a boil, remove it from the heat and stir in the cooked watermelon rinds. Cover the pot and let it sit overnight to allow the flavors to meld.

The next day, using a slotted spoon, carefully remove the rinds from the syrup and place them in a clean bowl. Return the syrup to the stove, adding 4 cups of sugar, and bring it back to a boil. Once the sugar has dissolved, remove it from the heat and stir in the watermelon rinds again. Cover and let it sit overnight.

On day three, repeat the process: remove the rinds from the syrup, place them in a bowl, and return the syrup to the heat with 2 cups of sugar. Boil until dissolved, then mix in the rinds and let sit overnight. Continue this process for the next six days, gradually reducing the sugar each time until you reach the final day.
Step 5
On day ten, itβs time to preserve your candy! Sterilize your canning jars, rings, and lids by boiling them in water. Pack the watermelon rinds tightly into the sterilized jars, ensuring there are no air pockets. Add two whole cloves and one cinnamon stick to each jar for extra flavor.
Step 6
Bring the syrup back to a boil and pour it over the packed rinds, filling each jar to within 1/4 inch of the top. Secure the lids and rings tightly.
Step 7
Prepare a large stockpot with a rack at the bottom and fill it halfway with boiling water. Carefully lower the jars into the pot, leaving a 2-inch space between them. If needed, add more boiling water until the jars are covered by 2 inches of water. Bring the pot to a full boil, cover it, and process the jars for 10 to 15 minutes.

Once done, remove the pot from heat and let the jars sit in the water for 2 hours. Afterward, take them out and place them on a cloth-covered surface, spaced apart to cool completely.
