Step 1
In a small bowl, dissolve the yeast in warm water and set aside.
Step 2
In another small bowl, beat together the eggs and egg yolk. Reserve 2 tablespoons of the beaten egg in the refrigerator for later use.

Preheat your oven to 170°F (75°C).
Step 4
In a large mixing bowl, combine the sugar, melted margarine, and salt. Mix until well dissolved.

Add the warmed and cold light cream to the mixture, followed by the yeast mixture. Stir to combine.

Incorporate the beaten eggs into the mixture, then gradually add the flour, one cup at a time, mixing well after each addition until a dough forms.

Turn the dough out onto a floured surface and knead for 5 to 7 minutes until smooth and elastic.

Lightly spray a clean bowl with cooking spray, place the dough inside, and spray the top of the dough as well. Cover with a dish cloth and place in the turned-off oven to rise until doubled in size, about 1 hour.

Once risen, remove the dough from the bowl and knead for an additional 2 to 3 minutes. Divide the dough in half, then each half into thirds.

Roll each section into long, 24-inch ropes. Braid three ropes together, securing the ends tightly. Repeat with the remaining sections.

Reheat the oven to 170°F (75°C) and line a cookie sheet with parchment paper. Transfer the braided loaves to the prepared sheet.

Turn off the oven and let the braids rise in the warm oven for 45 minutes.

After rising, brush the braids with the reserved beaten egg. Preheat the oven to 350°F (175°C).

Bake the braids in the preheated oven for 25 to 30 minutes, or until the tops are golden brown. Allow to cool completely before slicing.
