Cooking Instructions
Follow our step-by-step guide on how to make Pineapple Sweet Rolls.
Step 1
To create a delightful pineapple curd and fluffy rolls, start by blending fresh pineapple chunks, egg yolks, sugar, lemon juice, cornstarch, and a pinch of salt in a blender until smooth.
Step 2
Once blended, pour the mixture into a saucepan and heat it over medium heat.
Step 3
Keep whisking constantly for about 3 to 5 minutes until the curd thickens beautifully.
Step 4
When it reaches the right consistency, take it off the heat and whisk in unsalted butter until it melts completely.
Step 5
Transfer the curd to a small bowl, cover it with plastic wrap, and let it chill in the refrigerator for 2 to 3 hours until it sets perfectly.
Step 6
While the curd is chilling, it’s time to prepare the dough.
Step 7
In a microwave-safe measuring cup, mix milk and pineapple juice, then warm it in the microwave for about 30 seconds.
Step 8
Stir in the yeast until it dissolves, and let it sit for around 5 minutes until it becomes foamy and fragrant.
Step 9
In a mixing bowl, combine the foamy yeast mixture with an egg, sugar, and lemon zest.
Step 10
Next, add all-purpose flour, whole wheat flour, and salt.
Step 11
Use a stand mixer fitted with a dough hook to mix everything until the dough comes together.
Step 12
As the mixer runs, gradually add in the butter, mixing until it’s fully incorporated.
Step 13
Knead the dough for about 5 to 10 minutes until it’s smooth and pulls away from the sides of the bowl.
Step 14
Lightly spray the mixing bowl with cooking spray, return the dough to the bowl, and turn it to coat.
Step 15
Cover it with a clean dish towel and let it rise in a warm spot until it nearly doubles in size, which should take about an hour.
Step 16
While the dough is rising, pop a baking sheet in the refrigerator to chill.
Step 17
Once the dough has risen, turn it out onto a silicone baking mat and roll it into a rectangle measuring 12x15 inches.
Step 18
Slide the mat onto the cold baking sheet and refrigerate it for 15 minutes; this will make rolling and cutting much easier.
Step 19
After chilling, spread a thin layer of the chilled pineapple curd evenly over the dough, leaving a 1/2-inch border on three sides.
Step 20
Starting from the edge closest to you, roll the dough up lengthwise into a log.
Step 21
Use a sharp knife to slice the log into 12 even pieces.
Step 22
Grease a 9x13-inch baking pan and arrange the rolls inside, spacing them slightly apart.
Step 23
Cover them loosely and let them rise until they double in size, which should take about an hour.
Step 24
As the rolls rise, preheat your oven to 350°F (175°C) so it’s ready when they are.
Step 25
Once the rolls have risen, uncover them and bake in the preheated oven for about 25 minutes, or until they turn a lovely light golden brown.
Step 26
While the rolls are baking, prepare a sweet glaze by mixing confectioners' sugar, milk, a tablespoon of pineapple curd, lemon juice, and a pinch of salt.
Step 27
If the glaze is too thick, feel free to adjust the consistency with a little more milk.
Step 28
Once the rolls are out of the oven and still warm, drizzle the glaze over them for a delightful finish.
Step 29
Enjoy the sweet, tropical flavors of your homemade pineapple rolls!.
