After 24 hours, drain the zucchini and rinse it thoroughly a few times to remove any excess lime. Then, cover the zucchini with a fresh gallon of water and let it sit for another 3 hours. This step helps to further cleanse the zucchini and prepare it for pickling.
Step 3
In a large pot, combine the apple cider vinegar, white sugar, pickling spice, and salt. Heat this mixture over medium heat, stirring until the sugar has completely dissolved. Once dissolved, add the drained zucchini to the pot, stirring gently to combine. Cover the pot and let the zucchini mixture rest for 24 hours, allowing the flavors to deepen.
Step 4
