Step 1
In a saucepan over medium heat, warm the salsa for about 1 minute. Add the tortilla strips and 1/4 cup of chopped cilantro, then simmer for 5 minutes, stirring frequently. Remove from heat and set aside.
Step 2
In a large non-stick skillet, heat the olive oil over medium-low heat. Add half of the chopped red onion, minced garlic, and dried oregano. Cook until the onions are softened, about 5 minutes.
Step 3
If using, sprinkle in the Mexican-style seasoning blend. Pour in the egg substitute and stir until the eggs are scrambled and cooked through.
Step 4
Remove the skillet from heat and gently mix in the warmed salsa and tortilla strips.
