Step 1
Place the tri-tip roasts in one or two gallon-sized zip-top bags or a large sealed container.
Step 2
In a bowl, whisk together the dark lager, lemon juice, olive oil, sugar, Worcestershire sauce, black pepper, garlic salt, garlic powder, onion powder, and cayenne pepper until well combined.
Step 3
Pour the marinade over the tri-tips, seal the bags or container, and squeeze out as much air as possible. Refrigerate for 8 hours to overnight, flipping the bags halfway through.
Step 4
Preheat your outdoor grill to 375°F (190°C) and lightly oil the grate. Arrange coals or mesquite wood on one side of the grill.
Step 5
Remove the tri-tips from the marinade and place them directly over the coals or wood. Sear for 1 to 2 minutes on each side.
Step 6
Move the tri-tips to the cooler side of the grill, cover, and continue grilling until they reach your desired doneness, about 45 minutes for medium-rare.
Step 7
Once done, transfer the tri-tips to a cutting board, wrap them in foil, and let them rest for 10 to 15 minutes. Unwrap and slice against the grain before serving.
