Step 1
In a frying pan, heat the vegetable oil over medium heat.

Add the Thai chile pepper and minced garlic to the pan, cooking and stirring until the garlic turns golden, about 1 minute.

Introduce the cubed eggplants to the fragrant garlic oil, stirring to combine.

Pour in the water and cover the pan. Cook for 5 to 8 minutes, stirring occasionally, until the eggplants are tender.

Once the eggplants are soft, uncover the pan and stir in the dark soy sauce, white sugar, and salt. Mix well and continue cooking until the water evaporates and the eggplants are coated in the sauce, about 5 minutes.
