Step 1
In a bowl, pour the lemon juice over the dried cranberries and set aside to soak.
Step 2
In another bowl, combine the shredded turkey, prepared stuffing, softened cream cheese, and turkey gravy. Mix until well blended.
Step 3
Take a wonton wrapper and place it on a clean surface. Spoon about 1 tablespoon of the turkey mixture into the center of the wrapper.
Step 4
Moisten two opposite edges of the wrapper with a finger dipped in water. Fold the wrapper in half lengthwise and press the edges together with a fork to seal. Sprinkle a little salt on top. Repeat this process with the remaining wrappers and filling.
Step 5
In a large, deep skillet, heat the canola oil over medium heat. Fry the filled wontons in batches until they are golden brown and crispy, about 2 minutes per side. Once cooked, drain the wontons on paper towels and let them cool for about 5 minutes to set the filling.
Step 6
Drain the lemon juice from the cranberries. Place the cranberries in a food processor and pulse several times until finely chopped. Transfer to a bowl and mix in the minced onion, lime juice, jalapeno pepper, minced garlic, and water to create the salsa.

Serve the hot fried wontons with the cranberry salsa on the side.
