Step 1
In a gallon-sized resealable bag, combine the coconut milk, kecap manis, curry paste, ground turmeric, grated ginger, and vegan fish sauce. Seal the bag and shake well to mix the ingredients thoroughly.
Step 2
Cut the pressed and drained tofu into 2-inch cubes and add them to the marinade in the bag. Seal the bag again and gently shake to coat the tofu evenly. Allow it to marinate for at least 30 minutes.
Step 3
While the tofu is marinating, soak the bamboo skewers in water for 30 minutes to prevent burning on the grill.
Step 4
In a separate bowl, whisk together the peanut butter, coconut milk, chili-garlic sauce, kecap manis, lime juice, and ginger until the sauce is smooth. Set aside for serving.
Step 5
Preheat your outdoor grill to medium heat and lightly oil the grate to prevent sticking.
Step 6
Remove the tofu from the marinade, allowing any excess to drip off. Thread an equal number of tofu pieces onto each skewer.

Grill the skewers for about 10 to 15 minutes, turning occasionally and basting with the leftover marinade until the tofu is browned and cooked through.
