Step 1
In a saucepan, combine the milk, sugar, and butter. Heat over low until warm (about 112°F or 44°C). Remove from heat and stir in the yeast. Let it sit until bubbly, about 5-10 minutes.
Step 2
In a large mixing bowl, add the flour. Pour in the yeast mixture, then add the whole eggs, egg white, chopped almonds, dried apricots, orange zest and juice, lemon zest, and mahlepi. Mix until combined.
Step 3
Knead the dough on a floured surface until smooth and slightly sticky, adding more flour as needed. Place the dough in a greased bowl, cover, and let it rise until doubled in size, about 1 hour.
Step 4
While the dough is rising, combine the egg yolk and 1/4 cup milk in a small bowl and refrigerate.
Step 5
Preheat your oven to 350°F (175°C).

Once the dough has risen, punch it down to release air bubbles. Divide the dough into two equal portions, then each portion into three equal balls. Roll each ball into an 18-inch rope. Braid three ropes together to form a loaf, tucking the ends underneath. Repeat with the remaining dough.

Place the braided loaves on a baking sheet. Brush the tops with the egg yolk mixture and sprinkle with slivered almonds. Brush again with the egg yolk mixture for a shiny finish.

Bake in the preheated oven for about 40 minutes, or until the loaves are golden brown and sound hollow when tapped on the bottom.
