Cooking Instructions
Follow our step-by-step guide on how to make Traditional Kumla with Ham.
Step 1
Begin by selecting a spacious soup pot, ideally 10 quarts or larger, and place the ham inside.
Step 2
Pour in 16 to 20 cups of water, then bring it to a vigorous boil.
Step 3
Once boiling, lower the heat and allow it to simmer gently for about two hours, creating a flavorful stock.
Step 4
After simmering, carefully remove the ham from the pot and skim off any foam that has formed on the surface of the broth.
Step 5
For an extra touch of flavor, consider stirring in a teaspoon of salt to the broth.
Step 6
In a large mixing bowl, combine shredded potatoes with all-purpose flour, whole wheat flour, baking powder, and a teaspoon of salt.
Step 7
With very wet hands, mix the ingredients until a sticky dough forms.
Step 8
Bring the ham stock back to a rolling boil, keeping a bowl of water handy.
Step 9
With your wet hands, scoop about 2/3 cup of dough, press a piece of bacon into the center, and roll it into a ball approximately 2 1/2 inches in diameter.
Step 10
Gently slide the kumla into the boiling broth along the pot's edge to prevent splashing.
Step 11
Continue this process with the remaining dough, using the bowl of water to keep your hands moist.
Step 12
Once all the dumplings are in the pot, cover it and let them simmer over low heat for about 15 minutes.
Step 13
After this time, use a slotted spoon or spatula to gently lift any dumplings that may have stuck to the bottom.
Step 14
Cover the pot again and allow the dumplings to simmer for an additional hour, during which they will rise to the surface as they cook.
Step 15
When fully cooked, carefully lift the kumla from the broth with a slotted spoon and arrange them in a serving bowl.
Step 16
Finish by sprinkling with salt and pepper before serving, and enjoy the comforting flavors of this hearty dish.
