Step 1
Begin by combining 1/4 teaspoon of white sugar and yeast in a large bowl with warm milk, allowing the mixture to sit undisturbed until it becomes foamy, which should take about 10 minutes.

Next, incorporate 1 ½ cups of flour into the yeast mixture, stirring until fully blended.

Cover the bowl tightly with plastic wrap and place it in a warm spot to rise until it doubles in size, roughly one hour.

Meanwhile, in a separate bowl, use an electric mixer on medium speed to beat 4 egg yolks with the remaining white sugar until the mixture is thick and pale, taking about 2 to 3 minutes.

Add in the brandy and salt, mixing well.

Once the yeast mixture has risen, gently stir it to deflate, then fold in the yolk mixture along with melted butter until combined.
