Step 1
In a microwave-safe bowl, heat the milk until warm (about 105°F or 41°C), approximately 45 to 60 seconds. Pour the warm milk into the bowl of a standing mixer.

Add 1 tablespoon of sugar and the yeast to the warm milk. Stir gently and let it sit for about 5 minutes until it becomes foamy.

Mix in 1/2 cup of sugar, melted butter, eggs, and vanilla extract. Use a dough hook to combine the ingredients until well mixed.

Gradually add 4 cups of flour, sea salt, and cinnamon. Start mixing on low speed, then increase to high speed until a smooth, slightly tacky dough forms. If the dough is too sticky, add flour one tablespoon at a time until it reaches the right consistency.

Transfer the dough to a floured surface and knead it by hand for 3 to 5 minutes until it is smooth and elastic. Shape it into a ball and place it in a greased bowl. Cover with a warm, damp towel and let it rise in a warm place until doubled in size, about 1 hour.

While the dough is rising, prepare the filling by mixing brown sugar, softened butter, and cinnamon in a small bowl until well combined. Set aside.
