Cooking Instructions
Follow our step-by-step guide on how to make Ultimate Vegan Sushi Rolls.
Step 1
To start your sushi adventure, grab a saucepan and combine sushi rice, water, and a pinch of salt.
Step 2
Bring this mixture to a boil, then gently stir it once with a bamboo spatula.
Step 3
Lower the heat, cover the saucepan, and let it simmer for about 20 minutes, or until the water is fully absorbed and the rice is tender.
Step 4
Once done, set the rice aside to cool.
Step 5
Meanwhile, in a small saucepan, warm up some vegetable oil over medium heat.
Step 6
Add rice vinegar, sugar, and a dash of salt, stirring until the sugar dissolves and the mixture begins to simmer.
Step 7
Remove it from the heat and let it cool for at least 10 minutes.
Step 8
When the rice has cooled, gradually fold this flavorful mixture into it until the rice becomes slightly sticky but not gooey; you might not need all of the liquid, so feel free to adjust to your preference.
Step 9
Next, take your tofu and press out any excess moisture using a paper towel, then cut it into strips.
Step 10
In a skillet, heat olive oil over medium heat and add the tofu strips along with onion and garlic if you’re using it.
Step 11
Cook everything, stirring occasionally, until the tofu turns a lovely golden brown, which should take about 4 minutes on each side.
Step 12
While that’s cooking, mix vegan mayonnaise with Sriracha sauce in a small bowl, adjusting the spice level to your liking.
Step 13
Now, let’s assemble your sushi! Place a sheet of nori, rough side up, on a sushi mat.
Step 14
With wet fingers, spread a thick, even layer of your prepared rice over the nori, making sure to cover it completely.
Step 15
Then, arrange your tofu strips, avocado, cabbage, carrots, and cucumber in a neat line along the bottom edge of the sheet.
Step 16
Carefully roll the nori and sushi mat over the filling, then remove the mat and wrap the roll tightly in plastic wrap, twisting the ends to compress it nicely.
Step 17
Pop it in the fridge for about 5 to 10 minutes to set.
Step 18
Repeat this process with the remaining nori and filling.
Step 19
Once your sushi rolls are set, unwrap them from the plastic and slice them into bite-sized pieces.
Step 20
For a delicious finishing touch, drizzle your Sriracha mayonnaise over the top before serving.
Step 21
Enjoy your homemade sushi, and don’t forget to share with friends or family for a fun meal together!.
