Step 1
Preheat your oven to 225°F (110°C) and line a large baking sheet with parchment paper.
Step 2
In a large mixing bowl, combine the egg whites and cream of tartar. Using an electric mixer, beat the mixture on medium speed until soft peaks begin to form.

Gradually increase the mixer speed to high and add the sugar one tablespoon at a time, continuing to beat until stiff peaks form.
Step 4
Scrape the seeds from the vanilla bean and add them to the bowl along with the vanilla extract. Beat the mixture just until everything is well combined.
Step 5
Transfer the meringue mixture into a pastry bag and pipe small mounds onto the prepared baking sheet.
Step 6
Bake in the preheated oven for about 1.5 hours, or until the cookies are set. Once done, turn off the oven and let the cookies cool inside for an additional 1.5 hours before carefully removing them from the parchment paper.
