Step 1
Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing 9 cups or lining them with paper liners.

In a mixing bowl, whisk together the sugar, lemon juice, vegetable oil, lemon zest, and lemon extract until well combined. Stir in the coconut milk until the mixture is smooth.

In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, gently fold in the mashed banana and poppy seeds.
