Step 1
In a food processor, combine the chopped onion, green bell pepper, and red bell pepper. Pulse until the mixture is evenly chopped but not pureed.

Heat the olive oil in a large pot over medium-high heat. Add the onion and bell pepper mixture along with the shredded carrot and zucchini. Cook, stirring frequently, until the vegetables are soft, about 6 to 8 minutes.

Pour in the vegetable broth and add the rinsed lentils. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered, stirring occasionally, until the lentils are tender, about 15 minutes.

Stir in the diced tomatoes, chili powder, yellow mustard, cider vinegar, maple syrup, tomato paste, vegan Worcestershire sauce, salt, and pepper. Bring the mixture back to a boil, then reduce the heat and simmer until the sauce thickens, about 10 minutes.
