Cooking Instructions
Follow our step-by-step guide on how to make Vegan Potato Tacos Delight.
Step 1
Preheat your oven to 400°F (200°C).
Step 2
In a mixing bowl, combine the diced red potatoes with 1 tablespoon of vegetable oil and garlic powder. Toss until the potatoes are evenly coated.
Step 3
Spread the coated potatoes in a single layer on a baking sheet.
Step 4
Bake the potatoes in the preheated oven for about 30 minutes, or until they are tender and golden brown.
Step 5
While the potatoes are baking, heat the remaining tablespoon of vegetable oil in a skillet over medium-low heat.
Step 6
Add the diced red bell pepper, yellow onion, frozen corn, chopped jalapeno, salt, and black pepper to the skillet. Sauté the mixture for about 10 minutes, or until the vegetables are slightly softened.
Step 7
In a separate griddle or skillet, warm the corn tortillas over medium heat for 2 to 3 minutes, flipping them halfway through to ensure even warming.
Step 8
To assemble the tacos, place a portion of the baked potato mixture and sautéed vegetable mixture onto each tortilla.
Step 9
Top the tacos with chopped green onions and cilantro, and serve with lime wedges on the side.
