Start by preparing your baking dish: lightly coat a 9-inch square dish with cooking spray and generously dust it with half a cup of confectioners' sugar.

Next, grab a small saucepan and bring half a cup of water to a boil.

Once boiling, remove it from the heat and stir in the agar agar powder, letting it soak and dissolve for about 10 to 15 minutes.

While that’s happening, it’s time to whip up some egg whites! Using a stand mixer fitted with a whisk attachment, beat the egg whites until soft peaks form, creating a fluffy base for your marshmallows.

In another small saucepan, combine the remaining three-quarters of a cup of water, white sugar, and corn syrup.

Cook this mixture over medium-high heat until it reaches a temperature between 250 and 265 degrees Fahrenheit, or until a small drop of syrup forms a rigid ball when placed in cold water.

Once it reaches that perfect temperature, remove it from the heat and stir in the dissolved agar agar mixture.

With your stand mixer still running, slowly pour the hot syrup in a thin stream down the side of the bowl into the whipped egg whites.
