Step 1
Preheat your oven to 350°F (175°C). Grease the sides of three 9-inch round cake pans and line the bottoms with parchment paper.

In a large bowl, beat the softened butter and white sugar together using an electric mixer until the mixture is fluffy and light in color.

Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

In a separate bowl, combine the all-purpose flour, baking powder, and baking soda. Gradually add this dry mixture to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture, making three additions of flour and two of buttermilk.

Divide the batter evenly among three bowls. Tint one bowl with red food coloring, one with yellow, and one with blue. Mix until the colors are well incorporated.

Pour each colored batter into the prepared cake pans, smoothing the tops with a spatula.

For the fluffy icing, bring corn syrup to a boil in a saucepan. In a heat-proof bowl set over simmering water, beat egg whites and cream of tartar until frothy. Gradually add the hot corn syrup in a thin stream while continuing to beat until stiff peaks form. Remove from heat and mix in vanilla extract. Spread this fluffy icing over the top of the cake.
