Step 1
Bring a large pot of water to a boil. Add the rice vermicelli noodles and cook until softened, about 12 minutes. Drain the noodles and rinse them under cold water, stirring to separate. Set aside.

In a bowl, combine the minced lemongrass, soy-based liquid seasoning, dry sherry, brown sugar, and minced garlic. Add the sliced flank steak to the marinade, tossing to coat evenly. Let it marinate for 30 minutes.

While the steak is marinating, prepare the sweetened fish sauce. In a small bowl, mix warm water with sugar and lemon juice until the sugar dissolves. Stir in fish sauce, Thai peppers, and additional minced garlic. Adjust the taste as needed and set aside.

Heat a large skillet over medium-high heat. Cook the marinated flank steak for about 5 to 6 minutes on each side, until firm but slightly pink in the center.
