Step 1
In a food processor, combine the chopped zucchini and 1/4 cup of water. Puree until smooth, then transfer to a liquid measuring cup and add more water until you reach the 1-cup line.

Pour the pureed zucchini into the bowl of a stand mixer. Add the whole wheat flour, all-purpose flour, sourdough starter discard, olive oil, instant yeast, and salt. Mix until all ingredients are well combined.

Transfer the dough to a lightly floured surface and knead for 3 to 4 minutes until smooth.

Place the kneaded dough in a greased bowl, cover it, and let it rest in a warm place until it doubles in size, about 1 hour.

Once risen, turn the dough out onto a lightly floured surface and gently knead it 3 to 4 times.

Roll the dough into a 12-inch log and cut it into 12 equal pieces. Shape each piece into a round ball by pulling the edges to the center and creating a smooth top.

Arrange the rolls in a greased 9x12-inch baking dish in a grid pattern. Cover and let them rise until they fill the dish and are puffed up, about 1 hour.

Preheat your oven to 375°F (190°C).
