Step 1
In a blender or food processor, combine the chopped onion, lime juice, orange juice, peeled garlic, avocado oil, ground coriander, ground cumin, Mexican oregano, chipotle chile powder, smoked paprika, and a pinch of salt. Pulse several times to mix, then blend for 1 minute until smooth and no pieces remain.
Step 2
Transfer the marinade to a 1-gallon resealable bag and add the chicken thighs. Squeeze out most of the air, seal the bag, and gently massage the contents to ensure the chicken is well coated. Marinate in the refrigerator for 30 minutes to 3 hours for maximum flavor.
Step 3
Preheat your oven's broiler and position an oven rack about 4 inches from the heat source. Place the marinated chicken thighs on a broiler pan.
