Step 1
In a bowl, combine the chicken strips with lime juice, cumin, paprika, chili powder, cayenne pepper, and black pepper. Mix well and let the chicken marinate for 15 to 30 minutes.
Step 2
Heat a large skillet or wok over medium heat and add the olive oil. Once hot, add the red bell pepper and onion. Sauté for about 5 minutes until softened, then push the vegetables to the outer edges of the skillet.
Step 3
Add the marinated chicken strips to the center of the skillet. Cook, stirring frequently, until the chicken is no longer pink in the center, about 3 minutes. Continue to cook for an additional 2 minutes, mixing the chicken and vegetables until the liquid has evaporated. Remove from heat and set aside.
Step 4
To warm the corn tortillas, place them on a microwave-safe plate with damp paper towels between each tortilla. Microwave for about 30 seconds until hot and flexible.
Step 5
On each tortilla, spread 1 tablespoon of sour cream. Top with a quarter of the chicken and vegetable mixture, followed by 2 tablespoons of the shredded cheese blend.
