Step 1
Start by placing the bacon in a large, deep skillet over medium-high heat. Cook it, turning occasionally, until it’s beautifully browned and crispy, which should take about 10 minutes. Once done, transfer the bacon to a paper towel-lined plate to drain and cool. Once cool, crumble the bacon into bite-sized pieces and set aside.
Step 2
In the same skillet, drain all but 1 tablespoon of the bacon drippings. Add the chopped onion and sauté it until the edges start to turn golden brown. This will add a lovely depth of flavor to your salad. Once the onion is ready, set it aside to cool.
Step 3
Next, bring the water to a boil in a saucepan. Once boiling, sprinkle in the uncooked couscous, then remove the pan from the heat. Let it sit for about 5 minutes to absorb the water. After that, fluff the couscous with a fork and allow it to cool completely.
Step 4
In a large salad bowl, combine the cooled couscous, sautéed onion, diced carrot, diced cucumber, diced red bell pepper, and the rinsed garbanzo beans. Gently stir everything together to mix the ingredients well.
Step 5
For the dressing, whisk together the olive oil, white balsamic vinegar, soy sauce, sugar, curry powder, and a pinch of salt and pepper in a separate bowl until the sugar dissolves completely. This dressing will bring all the flavors together beautifully.

Pour the dressing over the salad mixture and toss lightly to ensure everything is well coated. Finally, sprinkle the crumbled bacon on top for that irresistible crunch and flavor. Serve immediately or let it chill in the fridge for a bit to enhance the flavors.
