Step 1
In a heavy saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

Add the crushed tomatoes, Worcestershire sauce, and a dash of cayenne pepper to the saucepan. Bring the mixture to a simmer, then reduce the heat and let it cook for about 10 minutes to develop the flavors.

Preheat your oven to 350°F (175°C).

Stir 1/2 cup of the grated Parmesan cheese into the tomato sauce. Spoon 1/4 cup of the sauce into each of 6 small oven-safe bowls. Carefully crack one egg on top of the sauce in each bowl, then dot with butter and sprinkle with the remaining Parmesan cheese and a dash of paprika for color.
Step 5
Place the bowls in the preheated oven and bake uncovered until the egg whites are set but the yolks remain soft, about 10 to 20 minutes. Serve the baked eggs with the warm corn tortillas.
