Step 1
Preheat your oven to 350ยฐF (175ยฐC) and lightly spray a baking sheet with cooking spray.
Step 2
Sprinkle 1/4 teaspoon of fajita seasoning over the tilapia fillets and place them on the prepared baking sheet.
Step 3
Bake the tilapia for 15 to 20 minutes, or until the fish flakes easily with a fork. Once done, remove from the oven and cut each fillet into three pieces.
Step 4
In a skillet sprayed with cooking spray, combine the frozen corn, black beans, and 1/8 teaspoon of fajita seasoning. Cook over medium-high heat for about 3 minutes, stirring occasionally, until heated through. Remove from heat.
Step 5
In another skillet, spray with cooking spray and add the pineapple chunks. Cook over medium-high heat for about 2 minutes until lightly browned. Add the chopped onion and cook for an additional minute until heated through. Remove from heat.
Step 6
In a large skillet, heat 1 teaspoon of olive oil over high heat. Add 4 tortillas and cook for about 30 seconds on each side until heated through. Remove the tortillas and repeat with the remaining tortillas using the remaining olive oil.
Step 7
To assemble the tacos, place a piece of baked tilapia on each tortilla. Top with the corn mixture, pineapple mixture, chopped cilantro, sliced avocado, chopped cabbage, a dollop of sour cream, and a squeeze of lime juice.
