Step 1
Start by heating 1 teaspoon of canola oil in a skillet over medium heat. Toss in the diced apples, 1 tablespoon of sugar, and the ground cinnamon. Sauté these ingredients together until the apples soften slightly, which should take about 5 to 10 minutes. Once done, remove the skillet from the heat and set it aside to cool a bit.
Step 2
In a separate bowl, whisk together the milk, melted butter, egg, bourbon, and vanilla extract until well combined. In another bowl, sift together the all-purpose flour, oat flour, 1 tablespoon of sugar, baking powder, and salt. Gradually stir the dry ingredients into the wet mixture until you have a smooth batter. Gently fold in the sautéed apples and crispy bacon, ensuring they are evenly distributed throughout the batter.
Step 3
Now, heat the remaining 1 teaspoon of canola oil in the skillet over medium heat. For each pancake, drop about 1/2 cup of batter onto the skillet. Cook until you see bubbles forming on the surface and the edges look dry, which should take about 3 to 5 minutes. Flip the pancakes and cook for an additional 3 to 5 minutes until they are golden brown on the other side. Repeat this process with the remaining batter, adding more oil to the skillet as needed.
