Cooking Instructions
Follow our step-by-step guide on how to make Chocolate Lace Cookies Sandwiches.
Step 1
Preheat your oven to 350°F (175°C) and line two baking sheets with silicone baking mats or aluminum foil, shiny side down.
Step 2
In a large bowl, combine the melted butter, white sugar, and brown sugar. Beat together using an electric mixer until well blended.
Step 3
Add the eggs one at a time, mixing thoroughly after each addition. Then, mix in the vanilla extract.
Step 4
Stir in the quick-cooking oats, ground pecans, and baking powder until fully incorporated into the batter.
Step 5
Using a teaspoon, drop small amounts of batter onto the prepared baking sheets, spacing them about 3 inches apart. The batter will spread thin while baking.
Step 6
Bake in the preheated oven for 6 to 8 minutes, keeping a close eye on them. They are done when the edges just start to brown.
Step 7
Allow the cookies to cool on the baking sheets for at least 10 minutes. They will continue to firm up as they cool.
Step 8
Once cooled, pair up cookies of similar size. Spread a thin layer of chocolate-hazelnut spread on one cookie and sandwich it with another cookie on top. Repeat until all cookies are filled.
