Step 1
Start by placing the rice in a bowl and covering it with cold water. Let it soak for about an hour to soften. Once soaked, drain the rice in a sieve and set it aside.

In a heavy-bottomed saucepan, bring the milk to a gentle boil. Once boiling, stir in the soaked rice, fresh grated coconut, white sugar, jaggery, and ground cardamom. Lower the heat and let it simmer, stirring occasionally, until the rice is tender and the mixture has thickened to a creamy consistency. This should take about 30 to 45 minutes, so be patient and enjoy the wonderful aroma filling your kitchen.
Step 3
While the rice is cooking, heat the ghee in a small skillet over medium heat. Add the cashews and raisins, frying them until the cashews turn a lovely golden brown and the raisins plump up. This step adds a delightful crunch and sweetness to your kheer, so donβt skip it!
Step 4
Once the rice mixture is ready, gently fold in the fried cashews and raisins. You can serve this delicious kheer warm right away, or for an even more refreshing treat, chill it in the refrigerator for a few hours before serving. If you find that the kheer has thickened too much after chilling, simply stir in a little extra milk to reach your desired consistency.
