Step 1
In a small bowl, whisk together the chicken broth, soy sauce, hoisin sauce, 1 teaspoon of cornstarch, crushed ginger, rice vinegar, dark brown sugar, ground white pepper, and red pepper flakes. Set the sauce aside.
Step 2
Place the remaining cornstarch in a resealable plastic bag. Tear the tofu into bite-sized chunks and add them to the bag. Shake the bag until each piece is evenly coated with cornstarch. If needed, sprinkle additional cornstarch by hand to ensure all pieces are well coated.
Step 3
Heat the canola oil in a wok or large nonstick skillet over medium-high heat until hot. Carefully add the tofu pieces one by one, cooking until they are golden brown on all sides, about 10 to 15 minutes. Use a slotted spoon to turn the pieces as they cook. Once browned, transfer the tofu to a plate lined with paper towels to drain excess oil.
Step 4
Pour out any remaining oil from the wok. Add the white parts of the sliced green onions and sauté for about 1 minute until fragrant. Pour in the prepared sauce and allow it to heat and thicken for about 2 minutes.
Step 5
Return the crispy tofu to the wok and toss gently to coat with the sauce. Discard the ginger piece. Garnish with the green onion tops, chopped peanuts, and toasted sesame seeds before serving.
