Step 1
Start by preheating your oven to 350°F (175°C). This will ensure it's nice and hot when your muffins are ready to bake. Next, spread the millet evenly on a baking sheet and pop it into the oven. Toast the millet for about 10 minutes, stirring occasionally, until it’s fragrant and golden. Once done, take it out and let it cool for about 5 minutes.

Now, increase the oven temperature to 400°F (200°C) and grease a muffin tin with 12 cups to prevent sticking. In a large mixing bowl, combine the toasted millet, all-purpose flour, yellow cornmeal, poppy seeds, 3 tablespoons of sugar (if using), grated lemon rind, baking powder, baking soda, and salt.
