Step 1
Start by preheating your oven to 350°F (175°C). Prepare a cookie sheet by greasing it or lining it with parchment paper to prevent sticking.

In a mixing bowl, cream together the unsalted butter and white sugar until the mixture is light and fluffy. This step is crucial for achieving that perfect texture, so take your time! Next, beat in the eggs one at a time, followed by the vanilla extract, ensuring everything is well combined.

In a separate bowl, sift together the pastry flour, ground cinnamon, and baking powder. Gradually mix the dry ingredients into the egg mixture until just combined.
