Step 1
Start by preheating your oven to a cozy 350°F (175°C). While the oven warms up, take a moment to grease two 9-inch round cake pans to ensure your cake comes out easily later on.
Step 2
Next, let's prepare the salmonberries. Take 2 cups of these beautiful berries and press them through a metal mesh strainer into a bowl. Use the back of a large spoon to help extract all that delicious pulp and juice, discarding any solids left in the strainer. You should have about 1 1/4 cups of salmonberry goodness. Pour this into a 2-cup measuring cup and add enough water to bring the total to 2 cups. Give it a good stir to combine.
Step 3
In a large mixing bowl, combine the cake mix, eggs, vegetable oil, and 1 cup of your salmonberry mixture. Blend everything together with an electric mixer on low speed until it's just moistened, which should take about 30 seconds. Then, increase the speed to medium and beat the mixture for 2 minutes until it's nice and fluffy.
Step 4
Now, fold in the remaining 1 1/2 cups of whole salmonberries gently into the cake batter. This will add delightful bursts of flavor throughout the cake. Pour the batter evenly into your prepared pans, spreading it out smoothly.

Cook this over medium-high heat, stirring constantly until it starts to simmer. Once it does, remove it from the heat and let it cool.

Once your cakes are out of the oven and still warm, take a fork and gently poke holes all over the top of each layer. This will allow the salmonberry sauce to soak in beautifully. Pour half of the cooled salmonberry mixture over each cake layer, letting it seep into those holes. Allow the cakes to cool completely before serving.
