Step 1
Begin by pressing the tofu: Place the tofu cubes on a plate lined with several paper towels. Cover with more paper towels and place another plate on top. Weigh it down with a 3- to 5-pound weight and let it press for 30 minutes. Discard any liquid that accumulates.
Step 2
In a shallow bowl, combine the pressed tofu with 2 tablespoons of soy sauce and 1 teaspoon of sesame oil. Gently stir to coat the tofu and let it marinate for 10 minutes, allowing the tofu to absorb the flavors.
Step 3
While the tofu is marinating, prepare the sauce. In a bowl, whisk together 2 tablespoons of soy sauce, 2 tablespoons of maple syrup, 1 tablespoon of sambal oelek, 1 tablespoon of rice vinegar, 2 minced garlic cloves, 1 teaspoon of sesame oil, and 1/4 cup of cornstarch. Set this sauce aside.
Step 4
After marinating, drain any remaining liquid from the tofu. Place 1/4 cup of cornstarch in a gallon-sized resealable bag. Add the tofu cubes, seal the bag, and gently shake until the tofu is evenly coated with cornstarch.
Step 5
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the coated tofu and cook for about 4 minutes, flipping occasionally until the tofu is golden brown on all sides. Once cooked, transfer the tofu to a plate and wipe the skillet clean.
Step 6
Pour the prepared sauce into the skillet and cook for about 2 minutes, or until it thickens slightly. Remove from heat and return the crispy tofu to the skillet, tossing to coat it in the sauce.
