Step 1
Rinse the black beans and soak them in a large pot with enough water to cover for 8 hours or overnight.
Step 2
After soaking, drain and rinse the beans. In the same pot, combine the drained beans, 3 quarts of water, and chicken bouillon cubes. Bring to a boil over high heat, then cover, reduce the heat to low, and let it simmer for 3 hours without draining the beans.
Step 3
While the beans are cooking, blend the chopped onion and green bell pepper in a food processor until smooth.
Step 4
In a skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the blended onion and bell pepper mixture, cooking and stirring for 4 minutes until softened.
Step 5
Stir the sautéed mixture into the pot with the beans. Add the sugar, oregano, cumin, salt, and black pepper. Allow the soup to simmer uncovered for an additional 1.5 to 2 hours, or until the beans are tender and the soup has thickened.
Step 6
Serve hot, garnished with minced onion.
