Step 1
Start by heating 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the Italian sausage links and cook them until they are beautifully browned and firm, which should take about 10 minutes. After that, slice the sausages into 1/2 inch pieces, return them to the skillet, and continue cooking until they are no longer pink. Once done, drain the sausage slices on a paper towel-lined plate to remove excess grease.
Step 2
In the meantime, grab a saucepan and heat the remaining tablespoon of olive oil over medium heat. Toss in the chopped onion and sauté until it softens and turns translucent, which should take around 5 minutes. Add the minced garlic and 1 1/2 teaspoons of Italian seasoning, cooking for another 2 minutes until the garlic is fragrant and soft.
Step 3
Now, pour in the crushed tomatoes along with 2 tablespoons of water, 1/4 teaspoon of salt, 1 teaspoon of white sugar, and the remaining 1 tablespoon of Italian seasoning. Bring this mixture to a gentle simmer, then reduce the heat to medium-low, cover, and let it simmer for about 20 minutes to allow the flavors to meld together.
Step 4
While the sauce is simmering, bring a large pot of lightly salted water to a boil. Once boiling, add the fresh gnocchi and cook them for 2 to 3 minutes, or until they float to the surface. This indicates they are perfectly cooked. Drain the gnocchi and set aside.
Step 5
To finish, stir the cooked Italian sausage slices back into the sauce to rewarm them. Then, gently toss the cooked gnocchi with the sauce until everything is well coated. Serve your delicious creation hot, garnished with a sprinkle of chopped fresh parsley and a generous amount of grated Romano or Parmesan cheese.
