Cooking Instructions
Follow our step-by-step guide on how to make Lychee Fried Rice.
Step 1
Start by bringing the jasmine rice and water to a boil in a saucepan over high heat. Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer for about 20 to 25 minutes, or until the rice is tender and the water has been absorbed. After cooking, spread the rice out in a shallow dish and let it cool in the refrigerator. This step is crucial as it helps to firm up the rice, making it perfect for frying. If you have leftover rice, you can use about 1 1/2 cups instead.
Step 2
Next, heat the vegetable oil in a wok or large skillet over medium-high heat. Add the minced garlic and sauté for just a few seconds until it becomes fragrant. Then, toss in the chopped carrots and onions, cooking them until the onions start to soften and become translucent. This will add a lovely sweetness to your fried rice.
Step 3
Once the vegetables are ready, add the cold rice to the pan. Stir and cook until the rice is heated through. Now, it’s time to bring in the flavor! Pour in the reduced-sodium soy sauce and soy-based liquid seasoning, followed by the chopped green onions, cashews, raisins, white sugar, and white pepper. Stir everything together until it’s all well combined and heated through.
Step 4
Finally, gently fold in the quartered lychees, allowing their sweet flavor to mingle with the savory rice. Cook for just a minute more to warm the lychees, then remove from heat. Your Lychee Fried Rice is now ready to be served!
How to Serve
Serve hot, garnished with additional green onions and cashews for a delightful crunch. This dish pairs wonderfully with a side of stir-fried vegetables or a light salad.
How to Store
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat, adding a splash of water to help steam the rice back to life.
