Step 1
Start by cooking the smoked maple bacon in a large skillet over medium-high heat. Keep an eye on it and turn occasionally until itβs beautifully browned and crisp, which should take about 10 minutes. Once done, drain the bacon on paper towels and set it aside to cool.
Step 2
In a large saucepan, combine the milk and unsweetened chocolate. Place it over low heat, stirring gently until the chocolate melts and the mixture is smooth, which should take about 2 to 3 minutes. Now, add the sugar all at once, whisking vigorously to combine and clean the sides of the pan as you go.
Step 3
Bring this luscious mixture to a boil, stirring constantly. You want to keep an eye on it until a candy thermometer inserted into the fudge reads between 236 to 238 degrees F (110 to 115 degrees C). Alternatively, you can test by dropping a bit into cold water; it should form a soft ball. As soon as it reaches the right temperature, remove it from the heat and fold in the crispy bacon pieces.
Step 4
Next, place the butter chunks on top of the fudge mixture and pour the vanilla extract over everything. Let it sit undisturbed with the thermometer still in place until the temperature drops to 110 to 115 degrees F (43 to 46 degrees C).

While the fudge cools, line an 8x8-inch baking dish with aluminum foil and give it a light coat of butter to prevent sticking. Once the fudge has cooled to the right temperature, stir in the butter and vanilla extract until everything is well combined. Pour the fudge into your prepared pan, smoothing the top with a spatula.
